Craig regularly teaches an upper undergraduate course in environmental sociology, Sociology 452, Environment and Society.

Craig also teaches a graduate level seminar in social ecology, Sociology 864, Social Ecology
Craig is a member of a group of faculty from five biogeophysical and social science departments that designed, developed and implemented an undergraduate course in Earth Systems Science.
Craig has also taught the graduate seminar in the sociology of agriculture.
Craig has taught the Residential Instruction In Study of the Environment
(RISE) seminar three times; two of the times were co-taught with colleagues from entomology and sociology.
In the past Craig has also taught Rural Sociology, and a Proseminar in Research Methods.
