Welcome to the Popcorn Course!

Course Description:

Why are there unpopped kernels in my microwave popcorn? If I let it go longer, will I have fewer unpopped kernels? But if I do that, will I have more burned kernels? Believe it or not, you can make a living doing research to answer questions such as these!
 
The goal of this 3-credit course is to introduce students to how food companies do research to improve their products, and to have students carry out a research project of their own. With generous financial support from ConAgra Foods (makers of Peter Pan Peanut Butter, Reddi-Wip, and Parkay Margarine, among others), students will conduct experiments on a genuine project associated with either ConAgra's Orville Redenbacher or Act II microwave popcorn.
 
The course will provide students with a genuine research experience on problems of interest to ConAgra, under the direction of Dr. Smith with guidance from ConAgra scientists. We will work in the lab for two hours on two days each week, and then meet as a group for one hour on Fridays to debrief the week, review data, and plan for the next week.
