Vietnamese spring roll

This is an indian sweet - it tastes really good.  Most of the ingredient, if not in local grocery store, can be found in Indian grocery store.  However, I haven't made one yet.  The recipe is from my friend, Sreekumar.

Ingredient

  • 1 cup sooji (white small round granules)
  • 1 cup sugar
  • 20 raisins
  • cashew nuts
  • 50 g ghee
  • 1.5 cups water
  • cardamom powder (optional)
  • food color

Procedure

  1. Slightly fry the sooji to make it hot.  Remove from the heat
  2. Add 1.5 cups of water, sugar, and food color in a pot.  Bring to boil
  3. Add sooji to the pot and stir until it becomes semi solid
  4. Fry cashewnuts/raisin in a pan with a little bit of ghee.
  5. Add fried cashew/raisin in the pot.  Add he rest of the ghee.  Stir for 5 min.
  6. Coat a plate with ghee.  Pour the mixture on to the plate.  Spread evenly and cut into small square.  Add cardamom on top, if desired.
