found this recipe on an internet. We have tried it -
it works well.
Ingredient
Casserole
- 3 large sweet potatoes (we are talking really really large.
If the potato is not that big, reduce other ingredient proportionally)
- 1 cup sugar
- 2 eggs
- 1 stick soften butter
- 1 tablespoon vanilla extract
Crunch topping
- 1/3 cup melted butter
- 1/3 cup flour
- 1 cup brown sugar
- 1 cup chopped pecans
- 1 tablespoon cinnamon
Procedure
- Boil potatoes until tender.
TAke skin off when cooled.
- Put in large bowl and whip them until
fluffy. Add all other ingredients.
- Pour into a buttered casserole.
Preheat the oven to 350F
- Mix all topping ingredients together.
- Add the topping on the casserole.
Bake at 350F for 45 min.
