Sweet Potato
 

Julia found this recipe on an internet.  We have tried it - it works well.

Ingredient

Casserole

  • 3 large sweet potatoes (we are talking really really large. If the potato is not that big, reduce other ingredient proportionally)
  • 1 cup sugar
  • 2 eggs
  • 1 stick soften butter
  • 1 tablespoon vanilla extract

Crunch topping

  • 1/3 cup melted butter
  • 1/3 cup flour
  • 1 cup brown sugar
  • 1 cup chopped pecans
  • 1 tablespoon cinnamon

Procedure

  1. Boil potatoes until tender.  TAke skin off when cooled. 
  2. Put in large bowl and whip them until fluffy.  Add all other ingredients.
  3. Pour into a buttered casserole.  Preheat the oven to 350F
  4. Mix all topping ingredients together.
  5. Add the topping on the casserole.  Bake at 350F for 45 min.
