Research Interests: 
Nutrition and colon cancer; gastrointestinal fermentations of plant cell wall polysaccharides and other indigestible dietary carbohydrates; food safety

Extension :  
Food Science Specialist; Hazard Analysis and Critical Control Points (HACCP); collaborate with state and federal on emerging food safety problems; education for consumers and food processors on general food safety issues.
